Ingredients
Keema Filling
- 1 cup Soy Crumbles
- 1 Tbsp Ghee or oil
- 1 medium Onion finely chopped
- 1/2 cup Bell Peppers finely chopped (any color)
- 1/2 cup Tomatoes finely chopped
- 1 Tbsp Ginger-Garlic Paste
- 3 Tbsp Tomato Puree Or Pizza Sauce
- Salt And Pepper to taste
- Garam Masala to taste
- Chili Powder optional, red, to taste
Paratha Dough
- 2 Wheat Paratha Dough Rounds about 6 inches in diameter, whole
- 2 Tbsp Ghee for cooking
Optional Toppings
- 1/4 cup Coriander chopped
- 2 Tbsp Cheddar Cheese shredded
- 1 Egg beaten (optional)
Instructions
- Soak the soy crumbles in warm water for about 30 minutes. Drain and squeeze out excess water. Crumble the softened soy into smaller pieces.
- Finely chop the onion, bell pepper, and tomatoes. Set aside.
- Heat 1 tablespoon of ghee in a pan over medium heat. Add the chopped onions and sauté until translucent. This builds a flavor base for the keema.
- Add the ginger-garlic paste and sauté for a minute until fragrant. Add the chopped tomatoes and cook until softened.
- Add the crumbled soy, tomato puree (or pizza sauce), salt, pepper, garam masala, and red chili powder (if using). Cook for 5-7 minutes, stirring occasionally, until the flavors meld.
- On a lightly floured surface, roll out one paratha dough round into a larger circle (about 8 inches).
- Spread a thin layer of pizza sauce (optional) over the paratha, followed by a sprinkle of cheese, if desired.
- Place a generous portion of the keema filling onto one half of the paratha. Sprinkle with more cheese, if desired.
- If using an egg, lightly brush the edges of the paratha with beaten egg. This helps seal the paratha.
- Fold the paratha in half, enclosing the filling. Press the edges firmly to seal.
- Heat a flat griddle or tawa over medium heat. Add the folded paratha and cook for 2-3 minutes per side, or until golden brown and crispy, drizzling with ghee or oil as needed.
- Serve the keema paratha hot, garnished with fresh cilantro, and your favorite chutney or dipping sauce.
Recipe Notes
Good To Know
- For a richer, more authentic keema flavor, add a teaspoon of roasted besan (gram flour) to the soya mince mixture—this mimics the nuttiness of traditional meat-based fillings.
- If you prefer crispier parathas, cook them on medium heat with a mixture of ghee and oil; this not only enhances flavor but also helps develop a golden, flaky crust.
- The soya mince can be prepared a day in advance; refrigerate it overnight to allow the spices to meld and deepen, resulting in a more robust, keema-like taste when stuffed in the paratha.
- Serve with a tangy mint yogurt dip or spicy pickle; the coolness and acidity beautifully balance the spicy, savory filling and elevate the overall experience.
Expert Tips
- Don't overfill the parathas, as this can make them difficult to seal and cook evenly. Aim for a moderate amount of filling to ensure a balanced flavor and texture.
- Experiment with different spices in your keema filling. A pinch of garam masala, coriander powder, or even a touch of smoked paprika can add depth and complexity.
- For a vegan alternative to ghee, use a high-quality plant-based butter or oil for cooking the parathas.
Storage Instructions
- Store leftover parathas in an airtight container in the refrigerator for up to 3 days. Reheat on a skillet or in the microwave until warmed through.
