  • 1/2 cup Carrot diced
  • 1/2 rib Celery diced
  • 1 cup Butternut Squash cooked (can substitute with other winter squash), diced
  • 1 cup Corn fresh or frozen, kernels

  • 1 cup Kidney Beans black, boiled or canned, drained and rinsed (can substitute with other beans like pinto, or cannellini)

Sauté Aromatics

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the diced carrots and celery and cook for another 5-7 minutes, until slightly tender.

Add Remaining Ingredients

  • Stir in the minced garlic and thyme. Cook for 1 minute more. Pour in the vegetable stock and bring to a boil. Add the cooked butternut squash, kidney beans, and corn kernels.

Simmer & Season
