Instructions

Prepare the Soybeans

  • Soak soybean granules in 2 cups of hot water for at least 1 hour. Drain well and squeeze out excess water.

Sauté Aromatics and Spices

  • Heat vegetable oil (or ghee) in a pressure cooker or large pot over medium heat. Add cumin seeds, cloves, cinnamon stick, cardamom pods, and bay leaf. Sauté for about 30 seconds until fragrant.

Cook Vegetables

  • Add finely chopped onions and green chilies. Sauté until onions are translucent and golden brown. Add chopped tomatoes and ginger-garlic paste. Cook until tomatoes soften, about 5-7 minutes.

Blend Spices

  • Stir in salt, coriander powder, red chili powder, and turmeric powder. Cook for another 2-3 minutes, stirring constantly, until the oil begins to separate from the spices.

Combine and Simmer

  • Add the drained soybeans and cubed potatoes to the pot. Mix well to combine. Sauté on low heat for 5 minutes to allow flavors to meld.

Pressure Cook (or Simmer)

  • Add 3 cups of water. If using a pressure cooker, cook for 3 whistles. If using a pot on the stovetop, bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.

Garnish and Serve

  • Garnish with fresh coriander leaves. Serve hot with steamed rice or naan bread.

Recipe Notes

Expert Tips for the Best Soybean and Potato Curry

  • For a richer flavor, use ghee instead of vegetable oil.
  • Adjust the amount of green chilies and red chili powder to your preferred spice level.
  • Soaking the soybeans for longer than an hour will result in a softer texture.
  • Adding a squeeze of lemon juice at the end brightens the flavors of the curry.
