Ingredients
Soybeans & Preparation
- 150 gm Soybean Granules
- 2 cup Water for soaking soybeans
Aromatics & Spices
- 2 tbsp Vegetable Oil or ghee
- 1 tsp Cumin Seeds jeera, whole
- 2 clove Cloves
- 1/2 stick Cinnamon Stick
- 2 Cardamom Pods elaichi, green cardamom preferred
- 1 Bay Leaf tej patta
Vegetables
Seasoning & Spices
- 1.5 tsp Salt or to taste
- 2 tsp Coriander Powder dhania
- 1 tsp Chili Powder adjust to taste, red
- 1/4 tsp Turmeric Powder haldi
- 1 tsp Ginger-Garlic Paste
Garnish
- 1/4 cup Coriander dhania, chopped, for garnish
Instructions
Prepare the Soybeans
- Soak soybean granules in 2 cups of hot water for at least 1 hour. Drain well and squeeze out excess water.
Sauté Aromatics and Spices
- Heat vegetable oil (or ghee) in a pressure cooker or large pot over medium heat. Add cumin seeds, cloves, cinnamon stick, cardamom pods, and bay leaf. Sauté for about 30 seconds until fragrant.
Cook Vegetables
- Add finely chopped onions and green chilies. Sauté until onions are translucent and golden brown. Add chopped tomatoes and ginger-garlic paste. Cook until tomatoes soften, about 5-7 minutes.
Blend Spices
- Stir in salt, coriander powder, red chili powder, and turmeric powder. Cook for another 2-3 minutes, stirring constantly, until the oil begins to separate from the spices.
Combine and Simmer
- Add the drained soybeans and cubed potatoes to the pot. Mix well to combine. Sauté on low heat for 5 minutes to allow flavors to meld.
Pressure Cook (or Simmer)
- Add 3 cups of water. If using a pressure cooker, cook for 3 whistles. If using a pot on the stovetop, bring to a boil, then reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
Garnish and Serve
- Garnish with fresh coriander leaves. Serve hot with steamed rice or naan bread.
