Instructions
Preparing the Rice

Recipe Notes
Tiffin Pairing
Curd and cucumber cool down the mildly spiced pulao and add a refreshing contrast.Make-Ahead Tip
Chop all the vegetables the night before and store them in the refrigerator to speed up the morning cooking.Quick Swap
Leave out the onion and ginger garlic paste for a simple no-onion, no-garlic version - the whole spices still give the pulao plenty of flavour.Allergen Note
This dish is naturally free of the common allergens used elsewhere in the plan, aside from the ghee, which contains dairy - swap in oil if avoiding dairy.Spice Note
Whole spices like cinnamon and bay leaf are mild in these small amounts, but can be left out entirely for a plainer pulao.Packing Tip
Let the pulao cool slightly before packing to avoid trapping steam inside the tiffin box.Recipe Nutrition
