  • 1 teaspoon Oil For roasting

  • 2 tbsp Curd
  • 8 Grapes Approximately, a small handful

Instructions
 

Preparing the Dough

  • Combine whole wheat flour, besan, grated carrot, coriander leaves, curd, turmeric, red chilli powder, carom seeds and salt in a bowl. Add the oil and mix.
  • Add water gradually and knead into a soft, pliable dough - it should be slightly softer than a regular roti dough. Cover and rest for 10 minutes.

Making the Theplas

  • Divide the dough into 2 portions. Roll each into a thin circle, dusting with flour as needed to prevent sticking.
  • Heat a tawa on medium heat. Cook the thepla, flipping and spreading a little oil on both sides, until light golden spots appear on each side. Repeat for the second thepla.

Packing

  • Let the theplas cool slightly, then fold into quarters or roll and pack in the tiffin box with curd in a separate small container and grapes on the side.

Tiffin Pairing

Curd and grapes balance the lightly spiced thepla and add natural sweetness.

Make-Ahead Tip

Grate the carrot the night before and store it covered in the fridge. The dough itself is best mixed fresh for the softest texture.

Quick Swap

Swap the grated carrot for grated bottle gourd or finely chopped fenugreek leaves for a more traditional Gujarati-style thepla.

Allergen Note

Contains wheat/gluten (flour) and dairy (curd).

Spice Note

Red chilli powder is optional and can be left out entirely for a very mild thepla.
