Ingredients
 

For the Pasta

  • 1/3 cup Pasta Any short shape, dry, use wheat pasta preferably
  • 1 pinch Salt For the boiling water

For the Sauce

  • 1 tbsp Carrot Finely chopped
  • 1 tbsp Green Peas Fresh or frozen
  • 1 tbsp Capsicum Finely chopped, optional
  • 1 tbsp Onion Finely chopped, optional - see Quick Swap
  • 1 Garlic Clove Finely chopped, optional - see Quick Swap
  • 1 Tomato Chopped, or 2 tablespoons tomato puree
  • 1 pinch Dried Herbs Mixed, Such as oregano or basil, optional
  • 1 pinch Salt Or as required
  • 1 pinch Black Pepper Optional
  • 1 teaspoon Oil Or butter
  • 1 tbsp Grated Cheese Optional, for topping

Instructions
 

Cooking the Pasta

  • Boil the pasta in salted water according to package instructions until just tender. Drain and toss with a few drops of oil to prevent sticking. Set aside.

Making the Sauce

  • Heat oil or butter in a pan on medium heat. Add garlic and onion if using, and saute until soft. Add carrot, peas and capsicum, and cook for 2 to 3 minutes.
  • Add the tomato and cook until it softens into a light sauce, about 3 to 4 minutes. Add dried herbs, salt and black pepper.

Finishing

  • Add the cooked pasta to the pan and toss well to coat in the sauce. Sprinkle grated cheese on top if using and let it melt slightly.

Packing

  • Let the pasta cool slightly and pack it in the tiffin box with cucumber slices and fruit on the side.

Tiffin Pairing

Cucumber and fruit add a light, fresh contrast to the mildly tangy pasta.

Make-Ahead Tip

Chop all the vegetables the night before. Cooking extra pasta in advance and tossing it fresh with the sauce in the morning also saves time.

Quick Swap

Leave out the onion and garlic for a simpler no-onion, no-garlic version - the tomato and herbs still carry good flavour on their own.

Allergen Note

Pasta contains wheat/gluten. Cheese, if used, is a dairy product - check the label on any packaged sauce or cheese used.

Packing Tip

Tossing the cooked pasta with a few drops of oil before mixing with the sauce helps keep it from sticking together by lunchtime.
