About Vegetable Pasta for Kids Tiffin
A simple, mildly seasoned pasta tossed with carrot, peas and a light tomato base - a familiar comfort food that also travels well as a school tiffin.Cucumber and fruit on the side keep the overall meal light and fresh.

Ingredients
For the Pasta
For the Sauce
- 1 tbsp Carrot Finely chopped
- 1 tbsp Green Peas Fresh or frozen
- 1 tbsp Capsicum Finely chopped, optional
- 1 tbsp Onion Finely chopped, optional - see Quick Swap
- 1 Garlic Clove Finely chopped, optional - see Quick Swap
- 1 Tomato Chopped, or 2 tablespoons tomato puree
- 1 pinch Dried Herbs Mixed, Such as oregano or basil, optional
- 1 pinch Salt Or as required
- 1 pinch Black Pepper Optional
- 1 teaspoon Oil Or butter
- 1 tbsp Grated Cheese Optional, for topping
Instructions
Cooking the Pasta
- Boil the pasta in salted water according to package instructions until just tender. Drain and toss with a few drops of oil to prevent sticking. Set aside.
Making the Sauce
- Heat oil or butter in a pan on medium heat. Add garlic and onion if using, and saute until soft. Add carrot, peas and capsicum, and cook for 2 to 3 minutes.
- Add the tomato and cook until it softens into a light sauce, about 3 to 4 minutes. Add dried herbs, salt and black pepper.
Finishing
- Add the cooked pasta to the pan and toss well to coat in the sauce. Sprinkle grated cheese on top if using and let it melt slightly.
Packing
- Let the pasta cool slightly and pack it in the tiffin box with cucumber slices and fruit on the side.
