Preparing the Rava

  • If using plain rava, dry roast it in a pan on low heat for 2 to 3 minutes until light golden and fragrant. Set aside. Skip this step if using pre-roasted rava.

Making the Upma

  • Heat oil in a pan on medium heat. Add mustard seeds and urad dal, and let them splutter and turn golden. Add curry leaves, green chilli and ginger if using.
  • Add onion if using and saute until soft. Add carrot and peas, and cook for 2 minutes.
  • Add water and salt, and bring to a boil.

Finishing

  • Lower the heat and slowly add the roasted rava while stirring continuously to avoid lumps. Cover and cook on low heat for 3 to 4 minutes until the rava is fully cooked and the water is absorbed.
  • Turn off the heat, fluff gently with a fork, and mix in lemon juice and coriander leaves if using.

Packing

  • Let the upma cool slightly and pack it in the tiffin box with a banana on the side.

Tiffin Pairing

A banana adds quick natural sweetness that pairs well with the savoury upma.

Make-Ahead Tip

Chop the vegetables the night before. Dry-roasting a larger batch of rava ahead of time and storing it in an airtight jar also saves a step on busy mornings.

Quick Swap

Leave out the onion for a simpler version. Finely chopped beans or corn can be used instead of peas depending on what you have on hand.

Allergen Note

Rava is wheat-based and contains gluten - not suitable for gluten-free diets.

Spice Note

Green chilli and ginger are both optional. Leave them out for a very mild version that works well for younger children.

Packing Tip

Upma can dry out as it sits - a splash of extra water while cooking keeps it soft and easy to eat by lunchtime.
