About Vegetable Poha for Kids Tiffin

Light flattened rice tossed with carrot, peas and a simple tempering, finished with a squeeze of lemon - a classic Indian breakfast that also travels well as a school tiffin.
This version keeps onion optional and the chilli mild, so it works for most tiffin rules. A few apple slices on the side add natural sweetness and a bit of crunch.

Preparing the Poha

  • Place the poha in a sieve and rinse briefly under running water until softened - do not soak or leave it in water. Drain well and set aside.

Making the Poha

  • Heat oil in a pan on medium heat. Add mustard seeds and let them splutter, then add curry leaves and green chilli if using.
  • Add onion if using and saute until soft. Add carrot and peas, and cook for 2 to 3 minutes until slightly tender.
  • Add turmeric powder, salt and peanuts if using, and mix. Add the softened poha and toss gently to combine without breaking the flakes. Cook for 2 minutes, stirring occasionally.

Finishing

  • Turn off the heat and mix in lemon juice and coriander leaves. Taste and adjust salt or lemon as needed.

Packing

  • Let the poha cool slightly before packing. Toss the apple slices with a few drops of lemon juice and pack them in a separate small compartment.

Tiffin Pairing

Apple slices bring natural sweetness and a crunchy contrast to the soft poha.

Make-Ahead Tip

Chop the carrot and onion the night before and store them in the refrigerator. Roasting a small batch of peanuts ahead of time also saves a step on busy mornings.

Quick Swap

Leave out the onion for a simpler, school-friendly version - the poha still tastes good with just carrot and peas. Swap peanuts for roasted chana if you prefer.

Allergen Note

Contains peanuts if used - leave them out for nut allergies. Poha itself is rice-based, but always check the label on packaged brands if you need to confirm gluten-free processing.

Spice Note

Green chilli is entirely optional here. Leave it out for a milder taste or use just a small piece for a hint of heat.

Packing Tip

A few drops of lemon juice on the apple slices keeps them from browning by lunchtime.
