Instructions

Preparing the Filling

  • Heat oil in a pan on medium heat. Add onion if using and saute until soft. Add capsicum and carrot, and cook for 2 to 3 minutes until slightly tender.
  • Add paneer, turmeric powder, red chilli powder and salt, and toss gently for 2 minutes until the paneer is lightly coated and warmed through.

Assembling the Wrap

  • Place the roti on a flat surface. Spoon the filling along the centre and roll tightly into a wrap, folding in one end if needed to keep the filling from falling out.

Packing

  • Wrap tightly in parchment paper or foil to hold its shape, and pack with fruit on the side.

Recipe Notes

Tiffin Pairing

A piece of fruit on the side keeps the meal light and balanced alongside the protein-rich wrap.

Make-Ahead Tip

This recipe assumes a plain roti is already made or left over from a previous meal, which makes it a quick option on a busy morning. The filling itself also comes together in a few minutes.

Quick Swap

Use grated mild cheese instead of paneer, or swap capsicum for any vegetable you already have on hand.

Allergen Note

Contains dairy (paneer) and wheat/gluten (roti).

Spice Note

Red chilli powder is optional - the filling is mild and tasty without it too.

Packing Tip

Wrapping tightly in parchment paper or foil helps the wrap hold its shape and stay neat until lunchtime.
