Ingredients
Jackfruit
- 250 gm Jackfruit
Spice Paste
- 2 tsp Ginger Paste
- 2 tsp Chili Paste green

- 1 tsp Cumin Seeds
- 1 tsp Coriander Powder
- 1/4 tsp Cinnamon ground
- 1 tsp Garam Masala
- 1 tsp Turmeric Powder

- 1/2 cup Tomato Paste
- 1/2 cup Coconut Milk
- 1/4 cup Oil
- 1 1/2 tsp Salt or to taste
Instructions
- Prepare the jackfruit by lightly oiling your hands and a knife. This prevents the sticky sap from adhering.
- Peel the jackfruit and cut it into cubic pieces. Immediately rub the cut pieces with lemon juice to prevent discoloration. Submerge the jackfruit pieces in water to maintain their freshness.
- Boil the jackfruit pieces until tender. Drain the water and set aside.
- Heat the oil in a pan. Shallow fry the boiled jackfruit pieces until lightly golden. This adds a pleasant texture to the curry. Remove the jackfruit and set aside.
- In the same pan, add the bay leaves, ginger paste, and green chili paste. Sauté for a minute until fragrant.
