Ingredients
Samo Rice Base

- 1 Alphonso Mango ripe, chopped
- 6 Grapes black, halved
- 6 Strawberries sliced
- 1/4 cup Almonds soaked, blanched, chopped, and roasted
- 1 tbsp Sesame Seeds black, roasted
- 1 tsp Melon Seeds roasted
Instructions
- Rinse the soaked samo rice thoroughly and drain well. This removes excess starch and ensures a lighter texture.
- In a pan, combine the milk and samo rice. Cook over medium heat, stirring occasionally, until the rice is soft and cooked through. Add a splash more milk if the mixture becomes too dry.
- Stir in the ground cardamom and honey. Adjust the sweetness according to your preference. Remove from heat and let the mixture cool completely.
- Prepare the fruit: chop the mango, halve the grapes, and slice the strawberries. Have your roasted almonds, sesame seeds, and melon seeds ready.
- Line donut molds with foil or parchment paper. This will make it easier to remove the donuts later. Layer the prepared fruits, sesame seeds, melon seeds, and roasted almonds attractively in the molds.
- Spoon the cooled samo rice mixture over the fruit layer, gently pressing down to create an even layer. If needed, use a little milk or water to help spread the rice mixture.
- Cover and refrigerate for at least 30 minutes to allow the donuts to set and chill.
- Carefully remove the donuts from the molds. Serve chilled and enjoy!
