Ingredients
For the Black Rice Pudding
- 1 cup Rice black
- 1 ltr Milk
- 1/2 cup Milk Powder or 1/2 cup cooked rice, for a richer texture
- 1/4 cup Jaggery light-colored variety preferred; adjust to taste
- 1/4 tsp Cardamom Powder optional, for added aromatic depth
For the Topping
- 2 Kiwi ripe
Instructions
Prepare the Black Rice
- Soak 1 cup of black rice in water for at least 4 hours, or preferably overnight. Drain well and spread on a clean plate or tray to air dry completely.
Grind the Rice
- Once dry, grind the black rice into a fine powder using a spice grinder or food processor.
Combine Milk and Rice Powder
- In a saucepan, combine the ground black rice powder with 1 liter of whole milk and 1/2 cup of milk powder (or cooked rice). Stir well to ensure no lumps remain.
Simmer the Milk
- Bring the milk mixture to a simmer over medium heat, stirring frequently to prevent sticking. Continue simmering, stirring occasionally, until the mixture has reduced by about half and begins to thicken, approximately 20-25 minutes.
Add Jaggery and Seasoning
- Stir in the jaggery and cardamom powder (if using). Continue stirring until the jaggery is fully dissolved and the pudding has reached a creamy, custard-like consistency.
Cool and Chill
- Remove from heat and allow the phirni to cool slightly. Transfer to a container, cover, and refrigerate for at least 2 hours to allow the flavors to meld and the pudding to set completely.
Prepare the Kiwi Topping
- Just before serving, peel and thinly slice the kiwis into half-moons.
Serve the Phirni
- Pour the chilled phirni into serving glasses or bowls. Top each serving with the kiwi slices and serve immediately. Enjoy!
