Ingredients
 

Forbidden Rice

  • 1 cup Rice black, uncooked; rinse thoroughly before cooking according to package directions

Sauce

Vegetables

  • 3 clove Garlic minced
  • 1/2 cup Carrot finely diced
  • 1/2 cup Spring Onions finely sliced, white and green parts separated

Instructions
 

Prepare the Sauce

  • Whisk together apple cider vinegar, brown sugar, soy sauce, chili powder, salt, and water in a small bowl. Set aside.

Cook the Rice

  • Cook black rice according to package directions until tender. Set aside.

Stir-fry the Vegetables

  • Heat sesame oil and vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and saute until fragrant (about 30 seconds).
  • Add diced carrots and saute for 2 minutes.
  • Add the white parts of the spring onions and stir-fry for another minute.

Combine and Finish

  • Pour the sauce into the wok and cook for 1 minute, allowing it to thicken slightly.
  • Add the cooked black rice and stir to combine. Stir-fry for 2-3 minutes, until heated through.
  • Stir in the green parts of the spring onions.
  • Taste and adjust seasoning with additional salt if needed.

Serve

  • Remove from heat and serve immediately. Garnish with extra spring onions if desired. Enjoy!
