Ingredients
Forbidden Rice
- 1 cup Rice black, uncooked; rinse thoroughly before cooking according to package directions
Sauce
- 2 tbsp Apple Cider Vinegar or rice vinegar
- 1 tbsp Sugar brown
- 1 tbsp Soy Sauce light
- 1/4 tsp Chilli Powder
- 1/2 tsp Salt or to taste
- 2 tbsp Water
Vegetables
- 3 clove Garlic minced
- 1/2 cup Carrot finely diced
- 1/2 cup Spring Onions finely sliced, white and green parts separated
Oil & Garnish
- 1 tbsp Sesame Oil
- 2 tbsp Vegetable Oil or other high-heat cooking oil
Instructions
Prepare the Sauce
- Whisk together apple cider vinegar, brown sugar, soy sauce, chili powder, salt, and water in a small bowl. Set aside.
Cook the Rice
- Cook black rice according to package directions until tender. Set aside.
Stir-fry the Vegetables
- Heat sesame oil and vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and saute until fragrant (about 30 seconds).
- Add diced carrots and saute for 2 minutes.
- Add the white parts of the spring onions and stir-fry for another minute.
Combine and Finish
- Pour the sauce into the wok and cook for 1 minute, allowing it to thicken slightly.
- Add the cooked black rice and stir to combine. Stir-fry for 2-3 minutes, until heated through.
- Stir in the green parts of the spring onions.
- Taste and adjust seasoning with additional salt if needed.
Serve
- Remove from heat and serve immediately. Garnish with extra spring onions if desired. Enjoy!
