  • 4 cups Milk use full-fat milk for best results
  • 1/2 cup Sweetened Milk condensed
  • 1/2 cup Sugar adjust to your sweetness preference

Nuts & Spices

  • 3 pod Cardamom elaichi, green, lightly crushed
  • 1/4 cup Almonds blanched and slivered, slivered
  • 1/4 cup Pistachios shelled and roughly chopped
  • 1 Bay Leaf tej patta
  • 1/4 cup Raisins kismis

Instructions
 

Prepare the Rice

  • Soak the basmati rice in water for 10 minutes. Pressure cook the rice with 1 cup of milk and 1/2 cup of water for 2 whistles. Allow the pressure to release naturally.

Infuse the Milk

  • Remove the lid and gently stir in the remaining 3 cups of milk, bay leaf, and crushed cardamom pods. Simmer for 10-15 minutes, allowing the flavors to meld.

Add Nuts and Sweeteners

  • Add the slivered almonds, pistachios, and raisins. Stir in the sweetened condensed milk and sugar, adjusting the sugar to your desired level of sweetness. Continue to simmer for another 5-7 minutes, stirring frequently to prevent sticking and burning, until the desired consistency is reached.

Serve and Enjoy

  • Remove from heat and allow to cool slightly. Serve warm or chilled, garnished with extra nuts if desired.
