Ingredients
For the Kheer
- 1/2 cup Rice brown
- 1/2 cup Jaggery grated or powdered
- 500 ml Milk or whole milk
- 1/4 tsp Cardamom Powder ground cardamom; also known as elaichi
Instructions
Prepare the Brown Rice
- Soak 1/2 cup of brown rice in enough water for at least one hour. Drain the water completely.
Cook the Kheer
- Heat the full-cream milk in a heavy-bottomed pan over medium heat. Add the soaked brown rice and stir well. Reduce the heat to low and simmer, stirring frequently to prevent sticking and burning, until the rice is fully cooked and the milk has reduced slightly (about 20-25 minutes).
Add Sweetener and Spices
- Stir in the grated or powdered jaggery and cardamom powder. Cook for another minute, stirring constantly, until the jaggery dissolves completely. Remove from heat immediately to prevent curdling.
Prepare the Garnish
- Heat ghee in a small pan. Add the cashews and roast until golden brown. Remove the cashews and add the raisins, stirring until they plump up slightly.
Combine and Serve
- Add the roasted cashews and raisins to the kheer. Stir gently to combine. Allow the kheer to cool slightly before serving warm or chilled.
