Ingredients
Amla Preparation
- 1 cup Indian Gooseberries amla, fresh, ripe gooseberries. about 10-12 medium-sized amla.
Sweetener and Flavor Enhancers
- 1/2 cup Sugar granulated sugar or jaggery for a richer flavor. adjust to your preference.
- 3 tbsp Virgin Olive Oil extra
- 2 tbsp Melon Seeds also known as magoz seeds. roasted for enhanced flavor (optional).
Instructions
Prepare the Amla
- Wash the Indian gooseberries thoroughly and pat them dry.
- Grate the amla using a fine grater.
Cook the Amla Mixture
- Heat a non-stick pan over medium heat. Add the grated amla and sugar.
- Cook, stirring frequently, until the sugar dissolves and the amla releases its juice and begins to soften. The mixture will thicken slightly.
- Reduce heat to low and continue to cook, stirring occasionally, until the mixture starts to leave the sides of the pan and pull away from the edges.
Finish and Store
- Remove the pan from the heat. Stir in the extra virgin olive oil. This adds flavor, shine, and enhances the nutritive value.
- Sprinkle in the melon seeds. Allow the chutney to cool completely.
- Transfer the cooled Amla Chutney to sterilized glass jars. Store in the refrigerator for up to 2 weeks.
