  • 1 cup Rice raw, soaked in water for at least 4 hours
  • 1 cup Water
  • 1 tbsp Oil vegetable or coconut oil
  • 1 1/2 cup Water
  • 1/2 tsp Salt

Prepare the Rice Flour

  • Grind the soaked raw rice into a fine powder using a blender. Add a little water if necessary.

Make the Filling

  • In a pan, combine the grated jaggery, coconut, and 1/2 cup of water. Cook over medium heat until the jaggery dissolves and the mixture thickens slightly. Stir continuously to prevent sticking.
  • Remove from heat and stir in ghee and cardamom powder. Set aside to cool.

Prepare the Dough

  • In a large bowl, combine the rice flour, salt, and oil. Gradually add the 1 1/2 cups of water while mixing until a smooth, soft dough forms.

Shape and Fill the Kozhakattai

  • Take small portions of the dough and roll them into small balls. Flatten each ball and fill with a spoonful of the cooled coconut filling. Gently shape into a dumpling, sealing the edges tightly.

Steam the Kozhakattai

  • Place the dumplings in a greased steamer basket and steam for 15-20 minutes, or until cooked through.
  • Serve warm with ghee.
