- 1 cup Jaggery finely grated
- 1 cup Coconut freshly grated
- 1/2 cup Water
- 1 tbsp Ghee clarified butter
- 1/2 tsp Cardamom Powder ground cardamom
- 2 cup Rice Flour
Instructions
Prepare the Rice Flour
- Grind the soaked raw rice into a fine powder using a blender. Add a little water if necessary.
Make the Filling
- In a pan, combine the grated jaggery, coconut, and 1/2 cup of water. Cook over medium heat until the jaggery dissolves and the mixture thickens slightly. Stir continuously to prevent sticking.
- Remove from heat and stir in ghee and cardamom powder. Set aside to cool.
Prepare the Dough
- In a large bowl, combine the rice flour, salt, and oil. Gradually add the 1 1/2 cups of water while mixing until a smooth, soft dough forms.
Shape and Fill the Kozhakattai
- Take small portions of the dough and roll them into small balls. Flatten each ball and fill with a spoonful of the cooled coconut filling. Gently shape into a dumpling, sealing the edges tightly.
Steam the Kozhakattai
