Ingredients
For the Dough
- 1 1/2 cup Rice Flour
- 1 1/4 cup Water
- 1/2 tsp Salt
- 1/2 tsp Vegetable Oil
- 1/2 tsp Ghee clarified butter
- 1 tsp Vegetable Oil for greasing
For Covering the Dough
- 1/2 yard Muslin Cloth damp
For the Filling
- 1 1/2 cup Coconut fresh, grated
- 1 cup Jaggery grated
- 1 tbsp Poppy Seeds lightly roasted
- 1/4 tsp Cardamom Powder
- 1/4 tsp Nutmeg Powder
For Serving
- 2 tbsp Ghee for drizzling, melted
Instructions
Prepare the Dough
- In a heavy-bottomed pan, bring 1 1/4 cups of water to a boil. Add ghee, salt, and 1/2 teaspoon of oil. Stir in 1 1/2 cups of rice flour and cook for 3-4 minutes, stirring constantly until a dough forms.
- Remove from heat and transfer the mixture to a greased plate. Knead into a soft, smooth dough. Cover with a damp muslin cloth to prevent drying.
Prepare the Filling
- In a non-stick pan, combine grated coconut and jaggery. Cook over medium heat for 2 minutes until lightly golden brown. Be careful not to overcook, as this will make the filling bitter.
- Stir in roasted poppy seeds, cardamom powder, and nutmeg powder. Set aside to cool.
Assemble the Modaks
- Divide the dough into 12 equal portions. Roll each portion into a smooth ball and flatten slightly into a 2 1/2-inch bowl.
- Place a spoonful of the filling in the center. Pleat the edges of the dough, gathering them together to form a bundle. Pinch the edges tightly to seal.
Steam the Modaks
- Steam the modaks for 12-15 minutes, or until cooked through. Ensure that water in steamer is continuously boiling.
Serve
- Serve the warm modaks immediately, drizzled generously with melted ghee.
Recipe Notes
Expert Tips for Perfect Ukadiche Modak
- For a smoother dough, use fine rice flour.
- Don't overcook the filling; it should be lightly golden and not bitter.
- Ensure the modaks are sealed tightly to prevent the filling from leaking during steaming.
- If the dough is too thick, add a teaspoon or two of water to make it pliable. If too thin, add a little more flour.
