Ingredients
For the Muthia
- 250 gm Bottle Gourd grated, lauki
- 1 cup Gram Flour besan
- 1 cup Rice Flour
- 1 cup Wheat Flour whole
- 2 tbsp Yogurt curd
- 1.5 tsp Salt or to taste
- 1/2 tsp Chili Powder or to taste, red
- 1.5 sprigs Coriander chopped
- 1 tsp Fennel Seeds finely ground, saunf
- 1/4 tsp Fenugreek Seeds finely ground, methi dana
For the Tempering
- 1 tbsp Oil
- 1 tsp Mustard Seeds rai
- 2 tbsp Sesame Seeds
Instructions
Prepare the Dough
- Grate the bottle gourd. In a large bowl, combine the grated bottle gourd, chickpea flour, rice flour, whole wheat flour, yogurt, salt, red chili powder, coriander, fennel seeds, and fenugreek seeds.
- Mix well to form a slightly stiff dough. Add a little water only if absolutely necessary to bind the mixture.
Steam the Muthia
- Shape the dough into small, cylindrical dumplings (muthia). Steam the muthia in a steamer for 15-20 minutes, or until cooked through and firm.
Prepare the Tempering
- Cut the steamed muthia into smaller pieces.
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add sesame seeds and sauté briefly until fragrant.
- Add a pinch of salt and red chili powder (if using more).
Sauté and Serve
- Add the cut muthia to the pan. Sauté for 2-3 minutes, stirring gently, until they are lightly browned and crisp.
- Garnish with fresh coriander leaves and serve hot.
