Ingredients
Green Chilies
- 500 gm Chilies green
Spices and Flavorings
- 100 gm Mustard Seeds rai powder, ground
- 1 Tbsp Turmeric Powder haldi
- 1 1/2 tsp Salt or to taste
- 1/2 cup Lemon Juice
Sweetener
- 1 cup Concentrated Sugar Syrup
Instructions
- Slit each green chili lengthwise. This helps the flavors penetrate and the chilies soften.
- In a large bowl, combine the slit green chilies, ground mustard seeds, turmeric powder, salt, and lemon juice. Mix well, ensuring the chilies are evenly coated.
- Cover the bowl and refrigerate for two weeks. This allows the flavors to meld and the chilies to mellow.
- After two weeks, transfer the chili mixture to a frying pan or skillet. Add the concentrated sugar syrup.
- Cook over medium heat, stirring frequently, until the syrup is well combined with the chili mixture and the chilies are softened. This also helps to further develop the flavors.
- Remove from heat and let the mixture cool completely. Cooling allows the flavors to settle and the condiment to thicken slightly.
- Transfer the cooled Sweet and Spicy Green Chili Condiment to a sterilized jar. Seal tightly.
- Store in the refrigerator for up to six months. Serve with steamed rice, parathas, puris, fried rice, or any dish that needs a kick of sweet and spicy flavor.
Recipe Notes
Good To Know
- For a milder version, deseed the green chilies before slicing—this reduces the heat while still retaining their flavor and crunch.
- If you prefer a deeper flavor, briefly toast the mustard seeds before grinding them into a powder; this adds a subtle nuttiness to the finished condiment.
- To enhance the tang, try substituting part of the lemon juice with a splash of apple cider vinegar for a unique twist.
- For a visually appealing presentation, use a mix of different colored chilies (such as yellow, red, and green) to create a vibrant condiment jar.
Expert Tips
- Sterilize the jars and lids before filling them with the chili condiment to ensure a longer shelf life and prevent spoilage.
- Adjust the amount of green chilies to your preferred level of spiciness. Start with a smaller amount and gradually add more until you reach your desired heat.
- This condiment pairs well with a variety of dishes, such as grilled meats, fish, sandwiches, and tacos. Experiment to find your favorite combinations.
Storage Instructions
- This condiment can be preserved for more than six months when stored properly.
- Store in airtight sterilized jars in the refrigerator.
