Ingredients
For the Chili Marinade:
- 1 cup Chilies approximately 10-12, green, washed and slit lengthwise
- 3 tbsp Vinegar white
- 1 tsp Salt or to taste; adjust based on chili heat
- 1/2 tsp Turmeric Powder
For the Spice Blend:
- 1 tbsp Mustard Seeds
- 1 tbsp Fennel Seeds
- 1/2 tbsp Ajwain Seeds carom seeds
For the Finishing Oil:
- 1/2 cup Mustard Oil boiled and cooled completely, mustard oil
Instructions
Prepare the Chili Marinade
- Mix green chilies, salt, turmeric powder, and vinegar in a bowl. Cover and let it sit in direct sunlight for at least 8 hours, or preferably overnight.
Dry Roast and Grind the Spices
- Heat a dry pan over medium heat. Add mustard seeds, fennel seeds, and ajwain seeds. Dry roast until fragrant and slightly browned, stirring frequently to prevent burning. Let cool completely.
- Grind the roasted spices coarsely using a mortar and pestle or a blender. Don't pulverize into a fine powder.
Combine and Preserve
- Add the coarsely ground spice blend to the marinated green chilies. Stir in the cooled mustard oil. Mix well, ensuring all chilies are coated.
- Transfer the mixture to a clean, sterilized glass jar. Seal tightly and place it in direct sunlight for 2-3 days, shaking the jar gently once a day.
