Ingredients
 

For the Chili Marinade:

  • 1 cup Chilies approximately 10-12, green, washed and slit lengthwise
  • 3 tbsp Vinegar white
  • 1 tsp Salt or to taste; adjust based on chili heat
  • 1/2 tsp Turmeric Powder

Prepare the Chili Marinade

  • Mix green chilies, salt, turmeric powder, and vinegar in a bowl. Cover and let it sit in direct sunlight for at least 8 hours, or preferably overnight.

Dry Roast and Grind the Spices

  • Heat a dry pan over medium heat. Add mustard seeds, fennel seeds, and ajwain seeds. Dry roast until fragrant and slightly browned, stirring frequently to prevent burning. Let cool completely.
  • Grind the roasted spices coarsely using a mortar and pestle or a blender. Don't pulverize into a fine powder.

Combine and Preserve

  • Add the coarsely ground spice blend to the marinated green chilies. Stir in the cooled mustard oil. Mix well, ensuring all chilies are coated.
  • Transfer the mixture to a clean, sterilized glass jar. Seal tightly and place it in direct sunlight for 2-3 days, shaking the jar gently once a day.

Store and Enjoy

  • After 2-3 days, move the jar to a cool, dark, and dry place. Your green chili pickle will continue to develop flavor over time. Store in an airtight container and enjoy with your favorite dishes!
