Ingredients
 

For the Chili Filling

  • 1 tbsp Cumin from 1 tsp whole cumin seeds, roasted, roasted and ground
  • 1 tbsp Coriander from 1 tbsp whole coriander seeds, roasted, roasted and ground
  • 1 tbsp Five Spice Masala
  • 1 tsp Mango Powder also known as amchur powder, dry
  • 2 tbsp Gram Flour also known as besan, roasted, roasted lightly
  • 1.5 tsp Salt or to taste

For the Chilies

  • 11 Chilies akola or jalapeño peppers recommended; remove seeds for milder heat, green
  • 1 tbsp Lemon Juice

Instructions
 

Prepare the Chilies

  • Slice green chilies diagonally. Remove seeds.
  • Marinate chilies with lemon juice for 10 minutes.

Make the Spice Filling

  • In a bowl, combine roasted cumin powder, roasted coriander powder, five spice masala, dry mango powder, roasted gram flour, and salt. Mix well.
  • Add mustard oil to the spice mixture and mix thoroughly.

Stuff and Cook the Chilies

  • Fill each chili with the prepared spice mixture.
  • Heat mustard oil in a pan. Add the stuffed chilies.
  • Cover the pan and cook for 5 minutes. Turn chilies and cook for another 5 minutes, or until tender.

Serve

  • Place mustard sauce on a serving plate. Arrange the cooked chilies on top and garnish with extra mustard sauce.
