Prepare the Roasted Cauliflower

  • Preheat oven to 400°F (200°C). Wash the cauliflower thoroughly and pat it dry. Cut the cauliflower into thick slices (steaks).
  • Marinate the cauliflower steaks with olive oil, onion powder, garlic powder, chili flakes, parsley, oregano, salt, and pepper. Let it marinate for at least 15 minutes.
  • Line a baking tray with parchment paper. Arrange the cauliflower steaks on the tray and bake for 20-25 minutes, flipping halfway through.
  • Remove from the oven and set aside.

Make the Indian White Gravy

  • Heat 2 tablespoons of olive oil in a nonstick pan. Add the chopped onions and green chilies and sauté until the onions are translucent.
  • Add the sliced garlic and julienned ginger. Cook until softened and the raw smell disappears. Remove from heat and let cool completely.
  • In a blender, combine the cooled onion mixture, yogurt, milk, chili flakes, almonds, fennel seeds, coriander powder, cumin seeds, salt, and pepper. Blend until smooth.
  • Heat the remaining olive oil in the same pan. Add the bay leaf, nigella seeds, and cumin seeds. Let them splutter.
  • Add the blended gravy mixture to the pan and stir constantly to prevent sticking. Add water and Kasuri Methi. Bring to a simmer.
  • Stir in the heavy cream and simmer for a couple of minutes. Season with salt and pepper to taste.

Assemble and Serve

  • Ladle the gravy into a serving dish. Arrange the roasted cauliflower steaks over the gravy. Garnish with chili flakes and dried parsley. Serve hot with roti or rice.
