Dry Ingredients

  • 3 cup Rice parboiled rice is preferred for best results
  • 1 cup Rice also known as beaten rice, flattened rice
  • 2 tbsp Lentils black, split black lentils
  • 1 tsp Salt adjust to your preference, to taste

  • 2 tbsp Oil for cooking the dosas. any neutral oil will work

Instructions
 

Prepare the Batter

  • Wash the rice and urad dal thoroughly. Add the poha (flattened rice). Soak all three in the buttermilk for at least 5-6 hours, or preferably overnight, for optimal softness.

Grind the Batter

  • Grind the soaked mixture to a smooth, slightly thin batter. The consistency should be pourable, slightly thinner than regular dosa batter. Add baking soda (if using) and salt. Mix well.

Cook the Dosa

  • Heat a non-stick dosa tawa or griddle over medium heat. Lightly grease the tawa with oil.
  • Pour a ladleful of batter onto the hot tawa. Do not spread the batter too thin; a slightly thicker dosa will result in a softer texture.
  • Drizzle a few drops of oil around the edges of the dosa. Cover the tawa with a lid for about 2 minutes to allow the dosa to cook through. Do not flip.
  • Once cooked, gently slide the dosa onto a plate. Repeat with the remaining batter.

Serve

  • Serve your super soft buttermilk dosas hot with your favorite chutney or sambar.
