Ingredients
Dry Ingredients
- 200 gm Whole Wheat Flour whole
- 200 gm All-Purpose Flour
- 1 tsp Active Yeast dry
- 1 tsp Salt
- ½ tsp Baking Soda
Wet Ingredients
- 2 tbsp Honey plus 1 tsp
- 50 ml Water lukewarm
- 200 ml Buttermilk
- 2 tbsp Oil
Milk Wash
- 1 tbsp Milk
Instructions
- In a bowl, dissolve 1 tsp of honey and the yeast in lukewarm water. Set aside until foamy. This activates the yeast, which is essential for the bread to rise.
- In a large bowl, combine the buttermilk, 2 tbsp of honey, baking soda, salt, and the activated yeast mixture. Whisk well to combine.
- Gradually add half of the flour (both whole wheat and all-purpose) to the wet ingredients, mixing until just combined.
- Add the remaining flour and the oil. Begin kneading the dough, either by hand or with a stand mixer, for about 10 minutes until smooth and elastic.
- Shape the dough into a boule (a round shape) and place it in a greased bowl. Cover and let rise in a warm place until doubled in size. This first rise allows the gluten to develop and the bread to gain its structure.
- Gently punch down the risen dough to release the air. Shape it into a log and place it seam-down in a greased loaf pan.
- Brush the top of the loaf with milk. This will create a beautiful golden crust. Cover the loaf loosely and let it rise for a second time, about 30 minutes, until almost doubled.
- Preheat the oven to 200°C (400°F). Bake the bread for about 40 minutes, or until golden brown and the internal temperature reaches 90-95°C (195-205°F). If the top browns too quickly, cover it loosely with foil.
- Remove the bread from the oven and let it cool in the pan for a few minutes before transferring it to a wire rack to cool completely. Cooling on a wire rack prevents the bottom crust from becoming soggy.
- Let the bread rest for at least 2 hours before slicing. This allows the crumb to set and makes for cleaner slices.

- While this recipe uses Aashirvaad Select Superior Sharbati Atta, any brand of wheat flour will work.
- You can use 15g fresh yeast, 5g instant yeast, or 7g dry yeast—the other ingredient measurements remain the same.
- For a 100% whole wheat version, add 4 tablespoons of extra water.
- Bake on the middle rack with both top and bottom heating elements on.
