Instructions

Preparation

  • Wash the sama rice thoroughly and soak it in water for at least 10 minutes.

Cooking the Kheer

  • Heat the milk in a heavy-bottomed pan or saucepan over medium heat. Bring the milk to a gentle simmer, stirring occasionally to prevent sticking.
  • Drain the soaked sama rice and add it to the simmering milk. Reduce the heat to low, and cook, stirring frequently, until the rice is tender and most of the liquid is absorbed (approximately 20-25 minutes).
  • Add the chopped nuts and cardamom powder. Continue to cook, stirring occasionally, until the nuts are fragrant and the kheer has thickened to your desired consistency.
  • If using saffron, add it now for color and flavor.
  • Remove from heat and stir in the sugar substitute until fully dissolved.

Serving

  • Pour the kheer into individual serving bowls. Garnish with rose petals and serve warm or chilled.

Recipe Notes

Expert Tips for the Perfect Sugar-Free Sama Rice Kheer

  • For a richer flavor, use full-fat milk. If using toned milk, you may need to add a tablespoon or two of cream for extra richness.
  • Toasting the nuts before adding them to the kheer enhances their flavor and adds a delightful crunch.
  • Adjust the amount of sugar substitute to your liking. Taste the kheer before serving and add more if needed.
  • If you prefer a smoother kheer, you can blend a portion of the cooked kheer before adding the nuts and spices.
