Ingredients
Grains & Rice
- 1/2 cup Millet sama rice, also known as little millet
Dairy & Sweetener
- 2 cup Milk full-fat or toned milk
- 1/4 cup Sugar Substitute erythritol, or xylitol. adjust to taste., such as stevia, use your preferred sugar substitute
Spices & Flavorings
- 1 tsp Cardamom also known as elaichi, ground cardamom
Garnish
- 2 tbsp Nuts cashews, chopped almonds, or a mix. lightly toasted for enhanced flavor., pistachios
- 1 tbsp Rose Petals for garnish
- Pinch Saffron for enhanced color and flavor, optional
Instructions
Preparation
- Wash the sama rice thoroughly and soak it in water for at least 10 minutes.
Cooking the Kheer
- Heat the milk in a heavy-bottomed pan or saucepan over medium heat. Bring the milk to a gentle simmer, stirring occasionally to prevent sticking.
- Drain the soaked sama rice and add it to the simmering milk. Reduce the heat to low, and cook, stirring frequently, until the rice is tender and most of the liquid is absorbed (approximately 20-25 minutes).
- Add the chopped nuts and cardamom powder. Continue to cook, stirring occasionally, until the nuts are fragrant and the kheer has thickened to your desired consistency.
- If using saffron, add it now for color and flavor.
- Remove from heat and stir in the sugar substitute until fully dissolved.
Serving
- Pour the kheer into individual serving bowls. Garnish with rose petals and serve warm or chilled.
