Ingredients
 

  • 1/2 cup Rice sama rice (washed and soaked in enough water for 30 minutes)
  • 1/2 cup Sugar you can add or less as per your taste
  • 1 ltr Milk full fat
  • 10 - 12 Cashews chopped
  • 15 - 17 Raisin
  • 10 - 12 Almonds chopped
  • 1-2 strands Saffron Strands soaked in 2 tbsp warm milk - optional
  • 2-3 drops Essence kewra essence

Instructions
 

Preparing the Sama Rice Kheer

  • In a heavy-bottomed pan, bring the full-fat milk to a boil over medium heat.

Cooking the Sama Rice

  • Once boiling, add the soaked sama rice, reduce heat to low-medium, and stir occasionally. Continue cooking until the rice is tender and the milk has thickened, about 15-20 minutes.

Sweetening and Flavoring

  • Stir in the sugar and continue cooking for another 5 minutes, until the sugar dissolves completely. Add the soaked saffron strands (if using) and kewra essence. Mix well and remove from heat.

Serving the Kheer

  • Transfer the kheer to a serving bowl. Garnish with half of the chopped cashews, almonds, and raisins. Let it cool slightly before serving warm or chilled. Garnish with remaining nuts and raisins before serving.
