Prepare the Papaya

  • Peel and grate the green papaya. Set aside.

Infuse the Saffron

  • Soak the saffron strands in 2-3 teaspoons of warm milk for about 10-15 minutes to release their color and flavor.

Roast the Cashews

  • Heat 1 tablespoon of ghee in a thick-bottomed pan or wok over medium heat. Add the cashews and roast until golden brown, stirring frequently to prevent burning. Remove from the pan and set aside.

Cook the Papaya

  • Add the remaining 1 tablespoon of ghee to the pan. Add the grated papaya and cook for 8-10 minutes over medium heat, stirring occasionally, until most of the moisture evaporates and the papaya softens.

Combine and Simmer

  • Add the milk and sugar substitute to the cooked papaya. Stir well to combine. Add the saffron milk (including the strands) and cardamom powder. Continue cooking over low heat, stirring frequently, until the mixture thickens and starts to leave the sides of the pan. This should take about 10-15 minutes.

Shape the Laddoos

  • Remove the mixture from the heat and let it cool completely until it's easy to handle. Once cool, grease your palms with a little ghee. Take small portions of the mixture (approximately 1-1.5 tablespoons) and roll them into small balls (laddoos).

Decorate and Serve

  • Gently press one roasted cashew into the top of each laddoo. Allow the laddoos to cool completely before serving. Store in an airtight container in the refrigerator for up to 3-4 days.
