- 2 Tbsp Bajra Flour
- 2 Tbsp Ragi Flour
- 6 Tbsp Whole Wheat Flour whole
- 1/2 tsp Cinnamon ground
- 1/2 tsp Ginger ground
- 1.5 tsp Salt
Wet Ingredients
- 2 Tbsp Olive Oil
- 1 cup Coconut Milk
- 1 Tbsp Vanilla Extract
Mix-Ins
- 2 Tbsp Carrot chopped, finely
- 1/4 cup Raisins
- 1/4 cup Blueberries
Instructions
- In a large mixing bowl, combine the jowar flour, bajra flour, ragi flour, whole wheat flour, cinnamon, ginger, and salt.
- Add the olive oil, coconut milk, and vanilla extract to the dry ingredients. Mix until just combined. Be careful not to overmix.
- Gently fold in the chopped carrots, raisins, and blueberries.
- Grease a baking mold. Pour the batter into the prepared mold.
- Bake in a preheated oven, or using the traditional hot sand method, for 15-20 minutes. The cake is ready when a toothpick inserted into the center comes out clean.
- Let the cake cool slightly in the mold before carefully removing it. Check for doneness by gently pressing the cake; it should spring back slightly when touched.
