Prepare the Spring Onions

  • Wash the spring onions thoroughly and chop them finely.

Combine Dry Ingredients

  • In a large bowl, combine whole wheat flour, gram flour, salt, ground cumin, dry mango powder, and asafoetida.

Add Wet Ingredients

  • Add the chopped green chilies, minced garlic, and finely chopped spring onions to the dry ingredients. Mix well.

Make the Dough

  • Gradually add water, mixing until a stiff dough forms. The spring onions will release some moisture, making the dough softer over time. Cover the dough and let it rest for 15 minutes.

Shape the Dough

  • Divide the dough into 8-9 equal portions. Roll each portion into a smooth ball.

Roll and Fold the Paratha

  • Dust your rolling surface with all-purpose flour. Roll each dough ball into a 3-inch circle. Spread a little ghee on the circle and sprinkle with flour. Fold the circle in half, then in half again to form a triangle. Roll the triangle into a thin 6-7 inch circle.
