For the Filling

- 1/2 tsp Coriander Powder
- 1/4 tsp Turmeric Powder for color and flavor
- 2 tbsp Oil for cooking and greasing
Instructions
Prepare the Dough
- Combine wheat flour and salt in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Cover and let rest for at least 15 minutes.
Make the Filling
- In a separate bowl, combine chopped onions, mixed vegetable pickle (if using), garam masala, red chili powder, coriander powder, and turmeric powder. Mix well.
Assemble the Parathas
- Divide the dough into equal-sized balls. Roll each ball into a thin circle. Place a spoonful of the onion filling in the center.
Seal and Roll
- Bring the edges of the dough together, pinching to seal the filling completely. Gently flatten the sealed ball into a thick circle, then roll it out into a thin paratha using a rolling pin.
Cook the Parathas
- Heat a flat griddle or tawa over medium heat. Lightly grease the surface with oil. Cook the paratha for 2-3 minutes per side, or until golden brown and crispy. Apply a little oil to both sides during cooking for added crispiness.
Serve
- Serve the hot Punjabi Onion Parathas with your favorite accompaniments like yogurt, pickle, butter, or chutney.
Recipe Notes
Expert Tips for Perfect Parathas
- For extra flaky parathas, let the dough rest for at least 30 minutes.
- Don't over-stuff the parathas; this can make them difficult to seal and cook evenly.
- Use a little dry flour on your rolling surface to prevent sticking.
- Adjust the amount of spices in the filling to match your preference. A little ginger paste adds a lovely zing.
