  • Combine whole wheat flour, salt, and 2 tablespoons of oil in a bowl. Gradually add water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth and elastic. Cover and let rest for at least 30 minutes.

Make the Filling

  • Heat 1 tablespoon of oil in a pan over medium heat. Add the ajwain seeds and let them splutter. Add the chopped spring onions and sauté for 2-3 minutes until slightly softened.
  • Add the green chilies, roasted cumin powder, and chaat masala. Stir well and cook for another minute.
  • Remove from heat and stir in the grated cheese. Let the mixture cool completely.

Assemble and Cook the Parathas

  • Divide the dough into 8 equal-sized balls. Roll each ball into a 4-inch circle.
  • Place a spoonful of the spring onion and cheese filling in the center of each circle.
  • Bring the edges of the dough together to enclose the filling, pinching to seal. Gently flatten the stuffed ball into a thick circle.
  • Heat a lightly oiled griddle or flat pan over medium heat. Cook the paratha for 2-3 minutes per side, or until golden brown and cooked through, pressing gently with a spatula to ensure even cooking and to create layers.
