Ingredients
For the Pickled Garlic
- 250 gm Garlic Cloves parboiled
- 200 ml Virgin Olive Oil extra
- 2 tsp Chili Powder red
- 1/4 cup Mustard Seeds Paste rai paste, or substitute with 1 tbsp mustard seeds
- 2 tsp Turmeric Powder haldi
- 1/4 cup Vinegar white
- 2 tsp Five Spice Powder or substitute with your favorite spice blend.
- 1.5 tsp Salt or to taste
Optional additions
- 1 tsp Pepper freshly ground, black, for added heat
Instructions
Prepare the Garlic
- Parboil the garlic cloves until slightly tender. Then, thoroughly dehydrate them. This can be done by spreading them on a baking sheet and leaving them out overnight or in a dehydrator.
Combine Ingredients
- In a large mixing bowl, combine the dehydrated garlic, red chili powder, turmeric powder, five-spice powder (or your spice blend), salt, mustard seeds paste, and white vinegar.
Add Olive Oil and Jar
- Stir in the olive oil until well combined. Pour the mixture into a clean, sterilized glass jar. Seal tightly.
Age the Pickles
- Let the pickles sit at room temperature for at least one week to allow the flavors to meld. The longer they age, the more intense the flavor will become. Once aged, store in the refrigerator for longer shelf life.
Serve and Enjoy
- Serve your delicious garlic olive oil pickles with any dish you like! They are especially great with roasted vegetables, curries, sandwiches, and salads.
