Ingredients
For the Taro Root
For the Spice Marinade
- 2 tbsp Lemon Juice
- 1.5 tsp Salt adjust to taste
For the Sauté
- 1 tbsp Olive Oil or use ghee or another cooking oil
- 2 tsp Carom Seeds also known as ajwain
- 1 tbsp Chili finely chopped. adjust quantity to your spice preference., green
- 1 tsp Chili Powder adjust to your spice preference, red
- 1/4 tsp Garam Masala adjust to taste
For Garnishing
- 1/2 cup Coriander also known as dhania, chopped
Instructions
Prepare the Taro Root
- Wash the taro root thoroughly. Boil in a pressure cooker for 10 minutes. Allow to cool, then peel and cut into 2-inch pieces.
Marinate the Taro Root
- In a bowl, combine the cooked taro root with lemon juice, salt, and freshly ground black pepper. Marinate for 5 minutes.
Sauté the Spices and Taro Root
- Heat olive oil in a pan. Once hot, add carom seeds and let them splutter. Add the finely chopped green chilies and sauté for a minute.
- Add the marinated taro root, red chili powder, and garam masala. Stir well to combine. Cook for 2 minutes, stirring occasionally, until heated through.
Garnish and Serve
- Remove from heat and garnish with fresh coriander leaves. Serve hot with roti, naan, or rice.
