Colocasia Root & Preparation

  • 500 gm Colocasia Root also known as arbi or taro root; peeled and cut into 1-inch thick rounds

Prepare the Colocasia Root

  • Pressure cook the colocasia root for 10-15 minutes, or until tender. Allow to cool completely, then peel and cut into 1-inch thick rounds.

Tempering and Frying

  • Heat the oil in a kadai (wok) or deep pan over medium heat. Once hot, add the mustard seeds and allow them to splutter.
  • Add the asafoetida (if using) and curry leaves. Sauté for a few seconds until fragrant.
  • Add the colocasia rounds to the pan and stir well to coat with the oil and spices.
  • Add the turmeric powder, red chili powder, and salt. Mix thoroughly to ensure even distribution of spices.
  • Increase the heat to high and sauté for 5 minutes, stirring occasionally, to allow the arbi to brown slightly.
  • Reduce heat to low, cover the pan, and cook for another 8-10 minutes, or until the arbi is cooked through and tender. Stir occasionally to prevent sticking.
  • Serve hot with sambar and rice.
