Ingredients
Colocasia Root & Preparation
- 500 gm Colocasia Root also known as arbi or taro root; peeled and cut into 1-inch thick rounds
Spices & Seasoning
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder adjust to your spice preference, red
- 1.5 tsp Salt or to taste
- 1/2 tsp Asafoetida hing (optional, but adds depth of flavor)
Frying & Tempering
- 4 tbsp Vegetable Oil or any neutral cooking oil
- 1 tsp Mustard Seeds rai
- 1 sprig Curry Leaves freshly plucked
Instructions
Prepare the Colocasia Root
- Pressure cook the colocasia root for 10-15 minutes, or until tender. Allow to cool completely, then peel and cut into 1-inch thick rounds.
Tempering and Frying
- Heat the oil in a kadai (wok) or deep pan over medium heat. Once hot, add the mustard seeds and allow them to splutter.
- Add the asafoetida (if using) and curry leaves. Sauté for a few seconds until fragrant.
- Add the colocasia rounds to the pan and stir well to coat with the oil and spices.
- Add the turmeric powder, red chili powder, and salt. Mix thoroughly to ensure even distribution of spices.
- Increase the heat to high and sauté for 5 minutes, stirring occasionally, to allow the arbi to brown slightly.
- Reduce heat to low, cover the pan, and cook for another 8-10 minutes, or until the arbi is cooked through and tender. Stir occasionally to prevent sticking.
- Serve hot with sambar and rice.
