  • Wash and peel the taro roots. Set aside.
    Rasila Niramish Kochu
  • In a mixing bowl, combine the turmeric powder, cumin powder, coriander powder, and red chili powder. Add a little water to form a smooth paste. This spice paste will infuse the taro with deep flavor.
  • Heat the mustard oil in a pan or pot over medium heat. Add the carom seeds and let them sizzle for a few seconds. This releases their aromatic oils. Add the taro roots and sauté for a minute or two, stirring constantly, until lightly browned.

  • Add the prepared spice paste to the pan and cook for another minute, stirring constantly, until fragrant. This allows the spices to bloom and develop their full flavor. Add the tamarind paste and Kashmiri chili powder. Stir well to combine.

  • Add enough water to cover the taro roots. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the taro is tender. Check for doneness by piercing a piece with a fork.
  • Remove the lid and check the consistency of the gravy. If it's too thin, simmer uncovered for a few more minutes to thicken it. If it's too thick, add a splash of water. Sprinkle the crushed kasuri methi over the curry and cook for another minute. This adds a distinct earthy aroma and flavor.

  • Season with salt to taste. Serve hot with rice or roti.

  • For a richer flavor, consider using bone-in chicken thighs instead of boneless, skinless breasts.
