Ingredients
For the Taro Root
- 500 gm Taro Root also known as arvi or coloasia
For the Spice Tempering
- 1 tbsp Carom Seeds ajwain or ajvain
- 2 tbsp Vegetable Oil
- 1 Onion finely chopped, large sized
- 1 tbsp Chili finely chopped, green
For the Spice Blend
- 0.5 tsp Turmeric Powder haldi
- 2 tsp Chili Powder red
- 1 tbsp Coriander Powder dhania
- 0.5 tbsp Dry Mango Powder dry mango powder
- 0.25 tsp Pepper Powder black
For Finishing
- 1.5 tsp Salt or to taste
- 2 tbsp Lemon Juice freshly squeezed
- 1 tbsp Coriander dhania, chopped, for garnish
Instructions
Prepare the Taro Root
- Wash the taro root thoroughly, peel it, and cut it into bite-sized pieces. Boil until tender but not mushy.
Make the Spice Tempering
- Heat the oil in a pan or kadai. Add carom seeds and let them splutter. Add the chopped onions and sauté until golden brown. Then, add the green chilies and sauté for 30 seconds.
Cook the Spice Blend
- Add the turmeric powder, red chili powder, coriander powder, and salt. Cook for 2 minutes, stirring constantly, until fragrant. Add the boiled taro root and mix well to coat with the spices.
Add Remaining Ingredients and Simmer
- Stir in the amchur powder (dry mango powder) and black pepper powder. Cook for another 5 minutes, stirring occasionally, until the flavors meld. Add the lemon juice and mix well.
Garnish and Serve
- Remove from heat and garnish with freshly chopped coriander leaves. Serve hot with roti, naan, or rice.
