- 1/2 cup Cottage Cheese homemade or store-bought
- 1/2 tsp Cumin
- 1 medium Onion finely chopped
- 1 medium Tomato finely chopped
- 4 Chili finely chopped; adjust to your spice preference, green
- 2 tbsp Honey
- 1/4 tsp Turmeric (haldi)
- 1 tsp Chili Flakes
- 1 tsp Chili Powder adjust to your spice preference, red
- 1 tbsp Oil vegetable or coconut oil
Instructions
Prepare the Dosa Batter
- Clean and soak the ragi flour, idli rice, and split black gram separately for 6, 4, and 4 hours respectively. Soak fenugreek seeds with the urad dal.
- Grind each soaked ingredient separately into a smooth batter. Combine all the batters and mix well. Add salt. Let the batter ferment overnight for at least 8 hours, or ideally 12-16.
- Next day, adjust the batter consistency by adding water as needed to achieve a dosa-pouring consistency.
Prepare the Honey Chili Paneer Filling
- Heat oil in a pan. Add cumin seeds and sauté until they splutter.
- Add finely chopped onions and sauté until translucent.
- Add finely chopped tomatoes and green chilies. Sauté until the tomatoes soften.
- Stir in honey, turmeric powder, red chili powder, and salt. Mix well.
- Add the crumbled paneer and cook for about 5 minutes, stirring gently, until heated through.
- Stir in chili flakes and remove from heat.
Cook the Dosa
- Heat a non-stick tawa or griddle over medium heat. Lightly brush with oil.
- Pour a ladleful of batter onto the hot tawa and spread it thinly in a circular motion to form a dosa.
- Drizzle a little oil around the edges of the dosa. Cover and cook for 2-3 minutes until the edges lift slightly.
- Add a spoonful of the paneer filling to the center of the dosa.
- Fold the dosa in half and cook for another minute until golden brown and crispy.
- Serve hot and repeat with remaining batter and filling.
Recipe Notes
Expert Tips for the Perfect Ragi Masala Dosa:
- For a smoother dosa batter, strain the batter through a fine-mesh sieve before cooking.
- Adjust the amount of green chilies and red chili powder to control the spice level according to your preference.
- If your paneer is too dry, add a teaspoon of milk or cream to the filling to make it creamier.
- For extra flavor in the dosa, consider adding a pinch of asafoetida (hing) while making the batter.
