  • Parboil the cauliflower florets until slightly tender. Drain and set aside. Break into smaller florets if needed.

  • Heat oil in a wok or large pan. Add cumin seeds and let them splutter. This releases their aromatic oils.
  • Add the sliced bell peppers (or onions) and green chilies. Sauté until softened.
  • Add ginger-garlic paste and sauté until fragrant, about 30 seconds. This step builds a flavor base for the masala.
  • Add the chopped tomato and cook until it breaks down into a pulp.
