Ingredients
For the Kozhukattai Dough
- 1 cup Ragi Flour
- 1 cup Coconut freshly grated, shredded
- 1.5 tsp Salt or to taste
- 1/2 cup Coriander finely chopped
- 1/2 cup Water approximately, more may be needed for desired dough consistency
For the Seasoning
- 1 medium Onion finely chopped
- 1 tbsp Ginger finely chopped
- 1 Chili Pepper adjust to your spice preference, finely chopped, green
- 1/4 cup Bell Peppers finely chopped (capsicum)
- 2 sprigs Curry Leaves chopped
- 1 tbsp Mustard Seeds rai
- 1 tbsp Urad Dal black, split
- 1 tbsp Chana Dal
- 2 tbsp Oil vegetable or coconut oil
Instructions
Prepare the Seasoning
- Heat oil in a pan. Add mustard seeds and let them splutter.
- Add split black gram (urad dal) and Bengal gram (chana dal). Sauté until lightly browned.
- Add finely chopped onion, ginger, green chili, bell pepper, and curry leaves. Sauté until the onion softens. Remove from heat and set aside.
Make the Dough
- In a large bowl, combine ragi flour, shredded coconut, salt, and chopped coriander leaves.
- Gradually add water while mixing until a soft, pliable dough forms. The dough should be slightly sticky but not too wet.
Shape and Steam the Kozhukattai
- Take a small lemon-sized portion of the dough and roll it into a ball.
- Shape the ball into a small, slightly flattened dumpling. You can use your fingers to create a slightly textured surface (kolkattai).
Steam and Serve
- Steam the kozhukattai for approximately 10-12 minutes in a steamer or idli cooker until cooked through and fluffy.
- Serve hot with your favorite chutney (tomato tamarind chutney is recommended).
