Ingredients
 

For the Kozhukattai Dough

  • 1 cup Ragi Flour
  • 1 cup Coconut freshly grated, shredded
  • 1.5 tsp Salt or to taste
  • 1/2 cup Coriander finely chopped
  • 1/2 cup Water approximately, more may be needed for desired dough consistency

Prepare the Seasoning

  • Heat oil in a pan. Add mustard seeds and let them splutter.
  • Add split black gram (urad dal) and Bengal gram (chana dal). Sauté until lightly browned.
  • Add finely chopped onion, ginger, green chili, bell pepper, and curry leaves. Sauté until the onion softens. Remove from heat and set aside.

Make the Dough

  • In a large bowl, combine ragi flour, shredded coconut, salt, and chopped coriander leaves.
  • Gradually add water while mixing until a soft, pliable dough forms. The dough should be slightly sticky but not too wet.

Shape and Steam the Kozhukattai

  • Take a small lemon-sized portion of the dough and roll it into a ball.
  • Shape the ball into a small, slightly flattened dumpling. You can use your fingers to create a slightly textured surface (kolkattai).

Steam and Serve

  • Steam the kozhukattai for approximately 10-12 minutes in a steamer or idli cooker until cooked through and fluffy.
  • Serve hot with your favorite chutney (tomato tamarind chutney is recommended).
