  • 2 tbsp Onion finely chopped
  • 1.5 Coriander fresh, finely chopped
  • 1 Chili finely chopped (adjust to taste), green
  • Water as needed, to achieve dosa batter consistency

  • 2 tbsp Gingelly Oil (sesame oil), or any cooking oil of your choice

Instructions
 

Prepare the Batter

  • In a large bowl, combine ragi flour, rice flour, semolina, grated beetroot, chopped onion, coriander leaves, green chili, and salt. Gradually add water while mixing until you achieve a smooth, dosa batter-like consistency. Let the batter rest for at least 10 minutes.

Cook the Dosa

  • Heat a non-stick dosa pan or griddle over medium heat. Once hot, pour a ladleful of batter onto the pan and spread it thinly into a circle using the back of the ladle. Drizzle a little gingelly oil around the edges.

Cook Both Sides

  • Cook until the edges start to lift and the bottom is golden brown. Flip the dosa and cook the other side for another minute or two, until lightly browned. Repeat with the remaining batter.

Serve and Enjoy

  • Serve the ragi beetroot dosas hot with your favorite accompaniments such as coconut chutney, sambar, or tomato chutney.
