For the Spicy Peanut Filling

  • 2 cup Dosa Batter fermented rice and lentil batter
  • 1/4 cup Water or as needed to adjust batter consistency
  • 2 tbsp Oil for cooking the dosas

Prepare the Spicy Peanut Filling

  • Roast the peanuts in a dry pan until fragrant and lightly browned. Let cool completely.
  • Combine the cooled peanuts, garlic cloves, red chili powder, aamchur powder, sugar, and salt in a food processor. Grind to a coarse paste.

Make the Dosas

  • Heat a lightly oiled griddle or tawa over medium heat.
  • Pour 1/4 cup of dosa batter onto the hot griddle, spreading it thinly into a circle.
  • Cook for 2-3 minutes per side, or until golden brown and crispy.
  • Repeat with remaining batter.

Assemble the Rolls

  • Spread a spoonful of the spicy peanut filling onto the center of each dosa.
  • Gently lift one corner of the dosa and make a small diagonal cut about 1/4 of the way in.
  • Roll the dosa tightly, tucking in the sides as you go.
  • Cut each roll into smaller, bite-sized pieces.
  • Serve immediately or pack in a lunchbox.
