Ingredients
Beetroot Mixture
- 1 Beetroot roughly chopped, small
- 2 Chillies green
- 2 Chillies dried, red
- 1 inch Ginger chopped
- 1 tsp Cumin Seeds
Dosa Batter
- 2 cup Idli Dosa Batter
For Cooking
- Cooking Oil for dosas
Instructions
- In a mixer grinder, combine the chopped beetroot, green chilies, dried red chilies, ginger, and cumin seeds.
- Grind the mixture into a smooth paste without adding water. Set aside.
- In a bowl, combine the idli dosa batter and the beetroot paste. Mix well.
- Heat a tawa or griddle over medium heat. This ensures even cooking.
- Pour one ladleful of batter onto the hot tawa and spread it into a thin, round circle.
- Drizzle oil around the edges of the dosa. Cook for about 2 minutes, or until the edges start to crisp and the underside is golden brown.
- Flip the dosa and drizzle oil on the other side. Cook for another minute, or until lightly browned and cooked through.
- Serve the beetroot dosa immediately while hot. Sambar and coconut chutney are classic accompaniments.
- For extra flavor, consider adding chopped onions to the beetroot mixture. Adjust dosa thickness to your preference.
Recipe Notes
Good To Know
- For an extra-crispy texture, spread the beetroot dosa batter thinly and drizzle a few drops of oil or ghee around the edges while cooking. This also enhances the earthy beetroot flavor.
- If you prefer a smoother dosa, blend the grated beetroot with a little water before mixing it into the batter to avoid fibrous bits and ensure an even color throughout.
- Add finely chopped curry leaves or fresh coriander to the batter for an aromatic boost that complements the sweetness of the beetroot and the heat from the chilies.
- Leftover beetroot dosa batter can be refrigerated for up to two days. Stir it well before use, as beetroot tends to settle at the bottom.
Expert Tips
- Experiment with different types of lentils and rice for the dosa batter to achieve variations in texture and flavor. A combination of urad dal and idli rice works well for a lighter, crispier dosa, while adding sometoor dal can create a softer texture.
- For a vibrant pink color, use fresh, deep red beetroots. Roasting the beetroots before blending can also intensify their sweetness and earthiness.
- Serve your beetroot dosas with a variety of chutneys, such as coconut chutney, tomato chutney, or mint-coriander chutney, to enhance the flavors.
Storage Instructions
- Cooked beetroot dosas can be stored in an airtight container in the refrigerator for up to 2 days. Reheat them on a griddle or in a microwave until warm and crispy.
