Ingredients

- 1 1/4 cup Rice Flour
- 1 1/2 tsp Salt or to taste

- 2 tsp Oil
- 1/2 tsp Mustard Seeds
- 1 sprig Curry Leaves
- 1 Large Onion finely chopped
- 2 Chillies finely chopped, green
Batter

Instructions
- In a large bowl, combine the maize flour, rice flour, and salt.
- Gradually add water while whisking continuously to form a smooth batter. The batter should be thinner than a traditional dosa batter, similar to a rava dosa batter. This ensures crispy dosas.
- Heat the oil in a small pan over medium heat. Add the mustard seeds and allow them to splutter. This releases their characteristic nutty aroma.
- Add the curry leaves and sauté for a few seconds until fragrant. Then, add the chopped onions and green chilies. Sauté until the onions soften and become translucent.
- Pour the tempering into the dosa batter and mix well.
- Heat a non-stick dosa tawa or griddle over medium heat. Lightly grease the surface.
- Using a ladle, pour a portion of the batter onto the hot tawa, starting from the edges and swirling inwards in a circular motion to form a thin crepe. Fill any larger gaps to create an even layer.
