Prepare the Dosa Batter

  • Prepare the dosa batter as per the instructions in the link provided (or your own favorite recipe).

Prepare the Bhaji Filling

  • Wash and finely shred the cabbage. Wash and chop the tomatoes and potatoes. Finely chop the onion.
  • Place the chopped vegetables (cabbage, tomatoes, potatoes, onion) in a pressure cooker. Add 1 teaspoon of coriander powder and 1/2 teaspoon of pepper powder.
  • Add 1/2 cup of water and cook on low-medium flame for 2 whistles. Allow the vegetables to cool after cooking.
  • Heat 1 tablespoon of oil in a wok or broad pan. Add mustard seeds and cumin seeds. Once the seeds splutter, add the ginger-garlic paste and sauté for 2 minutes.
  • Add turmeric powder, red chili powder, and salt to taste. Mix well.
  • Cook for 2-3 minutes. Using a pav bhaji masher (or a potato masher), gently mash the cooked vegetables, leaving some pieces intact for texture.
  • Add the mashed vegetables to the pan. Mix all ingredients thoroughly.
  • Cover and cook for 5-10 minutes, allowing the flavors to meld.

Assemble and Cook the Dosa

  • Heat a lightly oiled dosa pan or non-stick skillet. Pour a ladleful of dosa batter and spread thinly to form a crepe.
  • Once the edges begin to lift, spread a layer of the bhaji filling evenly over the dosa.
  • Cook until golden brown and crispy on both sides.
  • Garnish with chopped fresh coriander leaves and serve immediately with chutney.
