Vermicelli & Cooking Oil

  • 2 cup Vermicelli also known as vermicelli noodles or thin rice noodles
  • 2 tbsp Vegetable Oil or any neutral-flavored oil

Prepare the Vermicelli

  • Boil 2 cups of vermicelli in a large pot of salted boiling water with 1 tbsp of oil for 5-7 minutes, or until tender but still slightly firm. Drain immediately and rinse with cold water to prevent sticking. Toss with a little oil to keep it separate.

Sauté the Vegetables

  • Heat 1 tbsp of oil in a wok or large skillet over medium-high heat. Add the chopped onion and bell peppers. Stir-fry for 3-4 minutes, until slightly softened.

Add the Sauce

  • Stir in the tomato puree and Schezwan sauce. Cook for 1 minute, allowing the flavors to meld.

Combine and Finish

  • Add the cooked vermicelli to the wok. Pour in the black vinegar and season with salt and pepper (if using). Stir-fry for 3-5 minutes, until everything is well combined and heated through.

Serve

  • Serve your Spicy 4-Pepper Schezwan Vermicelli Stir-Fry immediately. Garnish with chopped cilantro or green onions (optional).
