  • Dry roast cumin, coriander, fenugreek, black pepper, and fennel seeds until fragrant. Grind into a coarse paste with a little water.

Marinate the Duck

  • Cut duck into medium-sized pieces. Marinate with the spice paste, turmeric powder, and salt for at least 20 minutes (longer is better).

Sauté Aromatics

  • Heat oil in a pressure cooker or large pot. Add mustard seeds, fenugreek seeds, and curry leaves. Cook until seeds crackle.

Cook the Vegetables

  • Add chopped onions and cook until golden brown. Add chopped tomatoes and cook until softened. Stir in the garlic paste and cook until fragrant.

Cook the Duck

  • Add the marinated duck meat and cook for a few minutes until lightly browned. Add red chili peppers.

Pressure Cook

  • Add a cup of water (or more if needed), ensuring duck is mostly submerged. Pressure cook for 5 whistles (or until duck is tender).

Simmer and Thicken

  • Once pressure is released, open the lid. Simmer uncovered over medium heat until the gravy thickens to your desired consistency.

Finish and Serve

  • Stir in garam masala. Garnish with fresh coriander leaves (cilantro). Serve hot with steamed rice or as a side dish with biryani.
