Ingredients
 

For the Upma

  • 1 cup Semolina rava, lightly dry roasted
  • 1/2 cup Peas fresh or frozen, green
  • 1 Onion finely chopped, large
  • 2 Chili adjust to taste, finely chopped, green
  • 2 cup Water as needed for desired consistency, or more
  • 1 tsp Salt to taste

Instructions
 

Prepare the Semolina

  • Lightly dry roast the semolina in a pan over medium heat until fragrant. Set aside to cool.

Make the Tempering

  • Heat the olive oil in a heavy-bottomed pan. Add the mustard seeds and let them splutter.
  • Add the curry leaves and grated ginger. Sauté until fragrant, about 30 seconds.

Sauté Vegetables

  • Add the chopped onions and sauté until translucent. Add the green chilies and sauté for 2 minutes.

Combine and Cook

  • Add the roasted semolina and green peas to the pan. Sauté for 2 minutes.
  • Pour in the hot water and stir well to prevent lumps.
  • Add salt to taste.
  • Bring to a simmer, then reduce heat to low, cover, and cook for 5-7 minutes, or until the water is absorbed and the semolina is cooked through, stirring occasionally to prevent sticking.

Garnish and Serve

  • Fluff the upma with a fork. Garnish with fresh coriander, grated coconut, sautéed curry leaves, and boiled peas (optional). Serve hot.
