Ingredients
For the Upma
- 1 cup Semolina rava
- 1/4 cup Cashews
- 2 1/2 cup Water may need slightly more or less depending on desired consistency
- 10 Curry Leaves fresh curry leaves are best
- 2 tsp Chilies finely chopped, green
- 1 tsp Cumin
- 1/2 tsp Salt adjust to taste
- 1/2 tsp Lentils black, split black lentils
- 1/2 tsp Chickpea roasted, roasted for deeper flavor, split chickpeas
For Roasting and Serving
- 3 tbsp Clarified Butter use more if needed
- 1 tbsp Coriander for garnish
Instructions
Roast the Semolina
- Dry roast the semolina in a pan over medium heat for 4-5 minutes, stirring constantly, until lightly golden and fragrant. Set aside.
Sauté Aromatics
- Heat 2 tbsp of ghee in a pan. Add cumin seeds and let them splutter. Then add cashews and sauté until lightly golden brown.
Add Lentils and Spices
- Add urad dal and chana dal to the pan. Sauté for 1 minute until lightly browned. Add green chilies and curry leaves; sauté for another 30 seconds until fragrant.
Boil and Simmer
- Pour in 2 1/2 cups of water and bring to a boil. Add salt.
Combine and Finish
- Add the roasted semolina to the boiling water. Stir continuously to prevent lumps from forming. Reduce heat and simmer for 2-3 minutes until the upma thickens to your desired consistency. If it becomes too thick, add a little more water.
Serve
- Grease a serving bowl with ghee. Transfer the prepared upma into the bowl. Garnish with fresh cilantro and serve hot.

- For a richer flavor, toast the semolina for a longer time, but watch carefully to avoid burning.
- The amount of water needed can depend on the type of semolina you are using; adjust accordingly.
