Ingredients
 

For the Upma

  • 2 cup Semolina medium-grind, rava
  • 4 cup Water
  • 1 tbsp Yogurt beaten
  • 2-3 Chili Pepper adjust to your spice preference, finely chopped; or to taste, green
  • 1/4 cup Peanuts and lightly roasted; or use 1/4 cup cashews, shelled, soaked
  • 2 tsp Sugar
  • Salt Salt to taste
  • 2 tbsp Clarified Butter or vegetable oil

Instructions
 

Roast the Semolina

  • Dry roast the semolina in a pan over medium heat for 10-15 minutes, stirring frequently, until it turns light golden brown and fragrant.

Prepare the Tempering

  • Heat 1 tablespoon of ghee in a separate pan. Add mustard seeds (or urad dal) and let them splutter. Add asafoetida, green chilies, curry leaves, and peanuts. Sauté for a minute until fragrant.

Combine and Cook

  • Add the beaten yogurt to the tempering and mix well. Pour in 4 cups of water and bring to a boil.

Add Semolina and Simmer

  • Gradually add the roasted semolina to the boiling water, stirring continuously to prevent lumps from forming. Add salt and sugar. Continue stirring until the mixture thickens.

Finish and Serve

  • Cover the pan and cook for 5 minutes, then stir in the remaining 1 tablespoon of ghee. Sprinkle a little water over the upma to make it softer. Cover for another minute. Garnish with grated coconut and chopped coriander. Serve hot with your favorite pickle.
